360 Gin and Tonic
A gin and tonic is a classic, refreshing cocktail. Hotel Three Sixty created its version that combines the botanical notes of gin with fresh fruits – perfect for enjoying poolside.
“We blend the gin with a strawberry cream for a silky softness that harmoniously blends with the robustness of the gin, paired with fresh blackberry compote that adds a layer of depth with nuances of sweetness and acidity. We top it off with fresh red strawberries for an additional freshness and tropical presentation. Taking a dip in the pool is refreshing on its own, so pairing it with a flavorful and refreshing cocktail takes the experience to another level,” says Jefferson Lobo Vásquez, bartender at Hotel Three Sixty. The refreshing cocktail (pictured above) includes Gin Meridor, Strawberry, Créme á la Fraise des Bois liqueur, tonic water, and red berries.
‘Honest’ Mocktail
Guests at the Corazón Cabo Resort & Spa can quench their thirst at the oceanfront infinity pools with the resort’s extraordinary collection of booze-free drinks – their inspirational mocktails. Corazón’s ‘Honest’ mocktail contains mint, which acts as a refreshing cooling agent, along with lemon, cucumber, pineapple juice, citrus juice, and housemade ginger soda for a revitalizing experience. The resort’s F&B Director, Armando Luna, says, “The only thing better than relaxing at the pool is relaxing at the pool with a drink.”
Strawberry Daiquiri
“Nothing complements the Strawberry Daiquiri poolside quite like the Kimpton Everly —it’s the splash of refreshment all guests need, perfectly blended to transport you to a state of relaxation poolside at our recently refreshed rooftop pool deck,” says Patty Quiroz, Director of Sales and Marketing at Kimpton Everly. The delicious drink has light rum, dark rum, housemade strawberry mix, and Fino sherry.
Eddie’s AP
Toast your travel companions at Solage, Auberge Resorts Collection’s poolside culinary destination, Picobar. Enjoy Eddie’s AP, made with La Luna Mezcal Cupreata, lime, al pastor syrup, pineapple, and Fresno salt. This cocktail is refreshing and colorful and the perfect addition to a day by the pool.
Green Briar Tea
Ponte Vedra Inn & Club offers a spiked rendition of an elevated Arnold Palmer called the Green Briar Tea. The cocktail is comprised of Nelson’s Green Brier Tennessee Whiskey, lemon juice, honey water, Combier, and raspberry tea served with raspberries and a lemon wheel.
“The perfect poolside cocktail is our take on the classic Arnold Palmer, prepared with fresh squeezed lemon juice, raspberry tea, and Nelson’s Green Brier Sour Mash Bourbon, offering a refreshing drink to sip by the pool while soaking up the sun,” says Laurel Gourlay, Ponte Vedra Inn & Club mixologist.
Mayan Princess
The colorful cocktail, which combines Midori, pineapple juice, white rum, Blue Curacao, and vodka, is a commonly requested drink by JW Marriott Cancun Resort & Spa’s BeachWalk poolside restaurant. This refreshing drink is perfect for a good time at the pool.
